    Turkey Super Meat-Logs with Cranberry Sauce

    Ingredients

    Meat-Logs

    • 1 lb ground dark meat turkey

    • 1 lb sage pork sausage

    • 1 turkey (or 2 chicken) liver(s)

    • 2 carrots

    • 1 cup spinach

    • 5 sage leaves

    • 1 Serenity Kids Sweet potato parsnip pouch

    • 1/2 cup fresh or frozen cranberries

    • 2 tbsp chia seeds

    • 2 tbsp Avocado oil (plus more for cooking)

    • 1 tbsp sea salt

    Cranberry sauce

    • 1/2 cup frozen or fresh cranberries

    • 1 apple, sliced

    • 1/2 cup turkey broth (or water)

    Preparation

    1. In a food processor, add the liver, chopped carrots, sage leaves and spinach. Pulse until carrots are finely diced and liver is well mixed.

    2. In a medium-sized bowl, add all the ingredients and mash with a potato masher until the mixture is homogeneous.

    3. With well-oiled hands, shape the meat mixture into log shapes, about 2-3 inches long, and set aside on a plate.

    4.Heat the avocado oil in a large frying pan over medium-high heat. In batches, cook the meat-logs on each side for about 4 minutes per side or until cooked through (165F), adding more oil if needed. When finished, place on a paper towel until all batches are complete.

    5. For cranberry sauce, heat a small saucepan on high heat. Add cranberry, apple and turkey broth (or water). Bring to a boil then reduce heat and simmer until apples are soft and cranberries have popped, about 10 minutes. Blend with a hand blender.

    6. Serve warm drizzled with cranberry sauce or used as a dip!
